Keto Chili Recipe

One thing that needs to happen when you make chili is to slow cook the heck out of it. Now you don’t have to do this, you can cook it a lot more quickly because we aren’t going to use any beans….but….one of the things about chili is the smell and the anticipation.

Chili should be slow cooking all afternoon in my opinion. It just makes that actually meal that much better.

Why no beans? Well as it turns out, beans really aren’t all that great for you, especially on a keto diet. Also, we avoid canned tomato for a couple of reasons. The first reason is that there is usually a ton of sugar added into the canned stuff, and The Well Kitchen is petrified at most preservatives and what they do to our insides. Fresh tomatoes actually are pretty high in carbs, but they aren’t the bad type of carbs found in the cans. We are going to add in some peppers and some worcestershire sauce to top it off and let it fill the house up with deliciousness as we slow cook it for a couple of hours.

INGREDIENTS

30 oz 80% lean ground beef
3/4 medium white onion
1 small Green Bell Pepper
1 medium roma tomato
5 slices bacon
1 tbsp chili powder
2 tsp Cumin
1/2 tsp black pepper
1 tsp salt
1 tsp Dried Oregano
3 cloves garlic
2 medium jalapeno peppers
1 tsp worcestershire sauce
2 cups Chicken/Beef Stock

DIRECTIONS

READY IN: 2 HRS

Finely chop bacon and add to a large pot or large dutch oven. 

Allow bacon to cook down until all fat is rendered and bacon is nearly done. 

Add ground beef and allow if to cook down and get some color. 

Finely chop garlic and jalapeno peppers. Rough chop tomato, bell pepper and onion. 

Add remaining ingredients, along with 2 cups of chicken or beef stock and allow to simmer for 1-3 hours. 

The longer it goes the better it tastes! If you don’t have stock on hand, water will be fine. 

Near the end of cooking remove the lid and allow chili to cook uncovered until most of the liquid is evaporated. Enjoy!
