Sausage Stuffed Mushrooms

Some people never get used to liking mushrooms.
Yet when you give them an honest try, and realize just how much flavor mushrooms absorb when you cook them, and honestly, there is a great nutritional element that mushrooms add to your gut health.

So what we decided to do with this one is put three of my favorite ingredients together: sausage, mushrooms, and cheese! They are so quick and easy to make, it will blow you away, especially with how good they taste!

Like most of my recipes, you can switch it up by trying different types of meat or cheese…pepper jack is one of my favorite variations.

Be careful to scoop out the mushroom caps so that you can get plenty of deliciousness stuffed in there. Then you are going to have something that is nice and soft, and unfortunately, bite size!

Sausage can be a little tricky to shop for: why? Well because like many products out there, there can be a lot of sugars in there that can sneak up on your carb load for the day. Make sure you are checking the label!

INGREDIENTS

2 links sausage (we use Bottos)
20 Baby Bella Mushrooms
1 cup Cheddar Cheese
1/4 medium Onion
1.5 tsp minced garlic
1/4 tsp pepper
1/4 tsp salt

DIRECTIONS

READY IN: 35 MINUTES

Remove stalks from all of the mushrooms and dice the stalks. Dice the onion and combine with the diced stalks. Set aside.
 
Remove sausage links from their casing and cook ground sausage. Once fully cooked set aside to cool. Add onion, stalks, and garlic to pan and cook down until onions are translucent.
 
Transfer to a bowl and combine with sausage and cheddar cheese. Add salt and pepper. Scoop sausage mixture into mushroom caps until you’ve filled all the mushrooms.
 
Place mushrooms on a baking sheet and bake at 350 degrees for 20 minutes
