1. Mix the melted coconut oil, sweetener, and peppermint essence together.
2. Pour half the mixture from step one into ice cube trays. Place it in the fridge. This will become the first layer.
3. Add the cocoa powder to the last half of the mixture, then pour on top the first layer (once the first layer is cool).
4. Place the ice cube tray back into the fridge until the mixture has set completely.
