INGREDIENTS

Olive Oil | 1 TBSP

Italian Seasoning | 1 TBSP

Ground Sausage | 1 lb

Small Onion- Chopped  | 1

Mushrooms- Chopped | 1 Cup

Cauliflower- Riced | 1 Cup

Salt | 1 TBSP

Pepper | 1 TBSP

Tomato Paste | 2 TBSP

Chicken Broth | 1/2 Cup

Parmesan Cheese | 1/2 Cup

Mozzarella Cheese | 1 Cup

Bell Peppers | 3 (large)

Fresh Basil | 1/4 Cup

DIRECTIONS

READY IN: 35 MINUTES

  1. Preheat oven to 325.
  2. Add the olive oil and sausage to a pan & set to medium heat. Brown sausage for 4 minutes.
  3. Add in the onions, mushrooms, cauliflower, salt, pepper, as well as the seasoning until vegetables are tender, this should be about 5 minutes.
  4. Add in the tomato paste & broth. Stir to combined everything.
  5. Simmer filling for 10 minutes under low to medium heat.
  6. Stir in the parmesan cheese. 
  7. Slice the peppers in half (lengthwise) and scoop in the filling.
  8. Top with the mozzarella cheese & bake for 25 to 28 minutes or until tops are golden.
  9. Garnish with basil.
