1) Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
2) Melt 2 tablespoons (28 g) of butter. In a bowl, toss together the cauliflower with the melted butter. Season with sea salt and black pepper to taste.
3) Arrange the cauliflower on the prepped baking sheet. heat for 15-20 minutes.
4) Heat the cheddar cheese, heavy cream, milk, and remaining tablespoon of butter, stirring casionally. Heat until the cheese mixture is smooth.
5) Toss cauliflower with cheese sauce before serving.
